Tr\u00e8s populaires au Vietnam \u00e9galement, ces rouleaux frais et non frits sont <strong>parfait pour l&rsquo;ap\u00e9ritif, ou pour une entr\u00e9e rafra\u00eechissante.<\/strong> La province de <strong>Battambang<\/strong> au <strong>Cambodge<\/strong> est connue pour \u00eatre le <strong>\u00ab grenier \u00e0 riz \u00bb<\/strong> du pays. R\u00e9put\u00e9e \u00e0 la fois pour son riz jasmin (Phka Rumdul), plusieurs fois prim\u00e9 comme <strong>meilleur riz du monde<\/strong>, et \u00e0 la fois pour la <strong>fabrication artisanale des produits traditionnels comme le papier de riz<\/strong>.<\/p>\n\n\n\n<p>Les\u00a0<strong>Nem Srors<\/strong>\u00a0sont pr\u00e9par\u00e9s avec des l\u00e9gumes frais, des herbes et parfois des prot\u00e9ines comme du poulet ou des crevettes, les rouleaux sont enroul\u00e9s dans une feuille de papier de riz souple. Le secret de leur r\u00e9ussite repose \u00e0 la fois sur l\u2019ordre du montage, qui doit \u00eatre pens\u00e9 pour la coupe, mais aussi sur des\u00a0<strong>ingr\u00e9dients frais et crus<\/strong>, finement d\u00e9coup\u00e9s. <br>La s<strong>alade est la premi\u00e8re couche essentielle<\/strong> <strong>o\u00f9 se joue la r\u00e9ussite du rouleau<\/strong>. Elle sert \u00e0 prot\u00e9ger la galette de l\u2019humidit\u00e9 et de coussin\/base pour la garniture, pour une d\u00e9coupe nette.
