Un <strong>grand classique de la cuisine khm\u00e8re<\/strong>, que vous pourrez retrouver partout au Cambodge avec la version poisson (version originale). Ce qui le distingue des currys plus connus, c&rsquo;est sa <strong>l\u00e9g\u00e8ret\u00e9<\/strong>, son <strong>\u00e9quilibre sucr\u00e9-sal\u00e9-acide<\/strong> et son <strong>ar\u00f4me subtil<\/strong>, sans le piquant habituel qu&rsquo;on redoute. Par exemple, contrairement au curry tha\u00eflandais, <strong>l\u2019Amok <\/strong>est <strong>doux<\/strong>, avec un <strong>arri\u00e8re-go\u00fbt<\/strong> <strong>sucr\u00e9<\/strong> et un <strong>m\u00e9lange<\/strong> <strong>subtil<\/strong> <strong>d&rsquo;\u00e9pices<\/strong> qui n&rsquo;est pas cens\u00e9 \u00eatre tr\u00e8s \u00e9pic\u00e9, mais plut\u00f4t<strong> parfum\u00e9 et aromatique<\/strong>. Gr\u00e2ce \u00e0 la p\u00e2te khm\u00e8re, on a un <strong>m\u00e9lange aromatique<\/strong> <strong>puissant<\/strong>, \u00e0 base de citronnelle, combava, galanga, ail et curcuma, une <strong>texture cr\u00e9meuse<\/strong> avec l\u2019\u0153uf et le lait de coco, et des <strong>saveurs umami<\/strong> avec les sauces.&nbsp;<\/p>\n\n\n\n<p>La recette que je vous partage s\u2019inspire des techniques traditionnelles mais <strong>peut se faire sans feuilles de bananier<\/strong>, gr\u00e2ce \u00e0 du <strong>papier<\/strong> <strong>sulfuris\u00e9<\/strong> ou <strong>aluminium<\/strong>. <strong>\u00c0 d\u00e9faut, <\/strong>vous pouvez toujours utiliser une petite <strong>cocotte<\/strong> <strong>individuelle<\/strong> ou un <strong>ramequin<\/strong>. Et si vous avez des feuilles mais vous pr\u00e9f\u00e9rez l&rsquo;option cocotte, rajoutez-la au fond, \u00e7a donnera un <strong>go\u00fbt encore plus authentique<\/strong> \u00e0 votre <strong>Cambodge<\/strong>, <strong>o\u00f9 j&rsquo;ai appris la cuisine traditionnelle<\/strong> en pleine campagne non loin de Siem Reap, <strong>avec un chef
