{"id":5419,"date":"2025-12-28T18:09:14","date_gmt":"2025-12-28T18:09:14","guid":{"rendered":"https:\/\/adelinebernard.com\/cuisine\/?p=5419"},"modified":"2026-01-18T15:14:16","modified_gmt":"2026-01-18T15:14:16","slug":"entremet-clementine-suze-speculos","status":"publish","type":"post","link":"https:\/\/adelinebernard.com\/cuisine\/2025\/12\/28\/entremet-clementine-suze-speculos\/","title":{"rendered":"Entremet aux Saveurs d&rsquo;Hiver : Cl\u00e9mentine, Suze et Sp\u00e9culos"},"content":{"rendered":"\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>J&rsquo;avais envie de cuisiner une p\u00e2tisserie de saison lors de mon passage en France, mais autour de moi personne n&rsquo;est vraiment dessert, et ceux qui le sont ont du diab\u00e8te, donc pas top&#8230; \u00c7a ne m&rsquo;a pas d\u00e9courag\u00e9 et je suis donc partie sur un entremet avec un socle en sp\u00e9culos, une mousse bavaroise \u00e0 la cl\u00e9mentine, un insert en cl\u00e9mentine pure, un cr\u00e9meux de Suze et un gla\u00e7age simple \u00e0 la cl\u00e9mentine. <\/p>\n\n\n\n<p>L\u2019<strong>acidit\u00e9 de la cl\u00e9mentine<\/strong> <strong>est<\/strong> <strong>contrebalanc\u00e9e<\/strong> par l&rsquo;amertume et la douceur herbac\u00e9e de la <strong>Suze<\/strong> et le <strong>croquant sucr\u00e9 des sp\u00e9culos<\/strong>. L&rsquo;id\u00e9e m&rsquo;est venu en cherchant quelque chose \u00e0 associer pour contrebalanc\u00e9e justement cette acidit\u00e9, et la Suze est un alcool \u00ab\u00a0oubli\u00e9\u00a0\u00bb, c&rsquo;\u00e9tait donc l&rsquo;occasion de la mettre \u00e0 l&rsquo;honneur.
